*In Search of Perfect Panna Cotta*

This gloomy summer day needed something sweet to brighten up the day, so I made Panna Cotta the first time in my life. For those who do not know this classic dessert, it´s an Italian origin cream pudding dessert which is usually served with some sort of sweet sauce, berries and fruits.

This recipe is originally from one of my cook books but upgraded by me for sweeter & more gentle taste. It is a basic Panna Cotta recipe, very easy to make and ready to serve in 4-6 hours. Enjoy!

Classic Panna Cotta

* 1 vanilla bean

* 4-5 dl cream (also half milk and half cream of the portion suits well)

* 3-5 tablespoons of sugar

* 2 gelatine leafs ( 3 if you want a heavier one)

for serving:

* fruits or berries

Split the vanilla bean in half and carve the seeds out. Put the cream (or the mix) in a kettle, add the vanilla bean and the seeds and the sugar and bring the mixture into boil. Remember to stir it once in a while and let it simmer for about 8 min. Meanwhile, put some cold water into a bowl, add the gelatine leafs and leave them be for 5 min.

Take the kettle off the stove. Squeeze the water out of the gelatine leafs and add one by one into the hot mixture. Stir well. Pour the mixture into 4 or 5 little hot proof glasses or moulds and let them cool off for some time. Afterwards put them into the fridge and let them be for appr. 4-6 hours. Before serving add some slices of fruits or berries on top.
