*!!Chocolate Whoopies!!*

Couple of weeks ago I decided to try out this one recipe I found: Chocolate Whoopies. I altered the recipe a bit for my own taste and the result was delicious! I´m going to share it here with you, my dear friends.




Chocolate Whoopies

*   100 g of butter
*   a little less than 2 dl of blonde palm sugar
*   1 egg
*   3 dl of wheat flour
*   1/2 dl of dark cacao powder
*   1 tea spoon of baking powder
*   1 tea spoon of vanilla sugar
*   1 dl of milk

the filling:
*   appr. 400 g of vanilla flavoured curd
*   40 g of dark chocolate or dark chocolate with berry flavour
*   on top: powdered sugar


1. Whisk the soft butter and the palm sugar together well. Add the egg and continue whisking properly.
2. Mix the flour and the powders with the vanilla sugar together. Add the mixture into the butter & sugar paste with the milk, by first adding some part of the dry mixture and then the milk, then more of the dry mixture and then milk again and so on. Remember to mix the paste gently while during this.
3. Use a table spoon to take out spoonfuls of the paste and lift the spoonfuls onto a baking paper. You will get approximately 30-40 pieces and you will need to leave some place around each spoonful. Bake in the oven in 175 C in the middle part of the oven, for 10-12 min. After baking let them cool off.
4. Roughly chop the chocolate and add it to the curd, and mix. Spread the filling on half of the whoopies (turn them around first and don´t be afraid that you might put too much of the filling on them, the more the better I´d say!) and turn the other half on top of them as lids. Sprinkle some powdered sugar on top. Put these delicacies in fridge for half an hour before serving. Keep the whoopies in fridge or freeze them in case you like to enjoy them much later.
A TIP: Serve some hot chocolate or a nice cup of coffee with the whoopies!
